I decided to offer you three recipes for an original dish: a quick snack in cucumber cups. During the vegetable season, many housewives do not know what to do with large cucumbers: it is inconvenient to salt them, and it is a pity to throw them away.

But everything will come in handy on the farm: large cucumbers can be used to make elegant glasses and use them for serving. Edible “dishes” with various fillings go off with a bang. Agree, this is much more interesting than just serving salad or cold cuts on a plate. I made three different filling options, but this, of course, is not the limit: use your imagination and come up with your own interesting fillings. Product composition

Recipe No. 1

  • one large cucumber;
  • one raw carrot;
  • 60 grams of cheese;
  • two pieces of ham.

Recipe No. 2

  • one large cucumber;
  • 100 grams of tuna canned in oil;
  • three cherry tomatoes;
  • one tablespoon of mayonnaise;
  • half a teaspoon each of mustard and salt;
  • half a teaspoon of ground pepper.

Recipe No. 3

  • one large cucumber;
  • 6 pieces of bacon;
  • 6 pieces of cheese;
  • one teaspoon of mayonnaise;
  • parsley.

Quick snack in cucumber cups: step-by-step preparation process

  1. First snack. Cut the raw carrots into cubes, 3.5-4 centimeters long.
  2. Cut hard cheese into the same pieces.
  3. We cut thin slices of ham into strips, the width of which should be equal to the length of the sticks.
  4. Wash the fresh cucumber, cut off the ends, and dry with paper napkins.
  5. Cut it into pieces: each part should be slightly longer than the carrot sticks.
  6. Using a spoon, scoop out the middle to make a glass with a small bottom: I got 6 pieces.
  7. We roll the ham into a roll and place it inside the glass, and place 4 blocks of cheese and carrots there.
  8. Second snack. Place the tuna in a bowl, add salt, ground black pepper, ready-made mustard and season everything with mayonnaise. Mix.
  9. Advice. It is best to use: there will be more benefits.
  10. We make cucumber cups in the same way as in the first recipe. Fill them with filling and place half a cherry tomato on top.
  11. Third recipe. Cut the hard cheese into thin long strips. It is better to take bacon in slices: so that the strips are thin and long.
  12. Lubricate the bacon with mayonnaise, lay strips of cheese along the entire length, roll into a roll.
  13. Place the rolls in cucumber cups and decorate with dill sprigs.

Ingredients for 12 pieces:


2 medium greenhouse cucumbers

100 g feta

1/3 small red sweet pepper

1/3 small yellow bell pepper

2 tbsp. black olives or kalamata olives

4 green onions

Mint leaves for decoration

Salt to taste


Using a vegetable peeler, cut off a few strips of skin from the cucumbers and leave the rest. Cut each cucumber into 6 equal cylinders. Using a small spoon, scoop out some of the pulp from the middle to make cups. Salt them to taste.



Finely chop the bell pepper, feta, olives and green onions.



Mix vegetables and cheese in a bowl. Place the salad in cucumber cups and serve.

Do you know what no holiday table can do without? Of course, no snacks. And what snacks should be on the summer, holiday table? Of course, from fresh vegetables, recently picked from the garden. Therefore, today on the agenda: a snack from fresh cucumbers.

I hope you know that I broadcast live every week in the Food and Figure community on and at. So, in one of these live broadcasts, I prepared zucchini pate with cashew nuts.

After this broadcast, one of my friends said that this recipe is no good, because pates are eaten only spread on bread. But he doesn't eat bread.

As a matter of fact, this recipe appeared in response to a friend’s complaint. Fresh cucumber appetizer.

I decided to use the same ingredients to make 3 serving options: cucumber cups, cucumber canapés and cucumber rolls. And they will all come with zucchini pate.

Ingredients:

  • Cashew nuts – 50 g.
  • Zucchini – 300 g.
  • Garlic - 1 clove.
  • Salt and pepper to taste.
  • Fresh cucumbers – 6 pcs (648 g).
  • Radishes – 4 pcs.
  • Red, bell pepper- 1 PC
  • Dill – 2-3 sprigs.

How to prepare an appetizer from fresh cucumbers.

Zucchini pate.

First you need to prepare the filling. Soak the cashews for 5 hours, cut the zucchini into circles, add garlic, salt and pepper and bake in the oven at 180 degrees for 20 minutes. When the zucchini has cooled, combine them with the nuts and puree with a blender until smooth.

Cups of cucumbers.

Wash the cucumbers, cut off the butts. If the skin of the cucumbers is hard, it is better to cut it off with a vegetable peeler.

Now cut the cucumbers into “barrels” 2.5-3 cm high. Carefully, using a teaspoon, in a circular motion, remove the pulp with seeds from the cucumbers. So that they turn into cups.

Now cut the red bell pepper into strips 0.4-0.5 mm wide. Carefully cut off the skin with a sharp knife. Cut the pepper pulp into small cubes.

Fill cucumber cups with pate and top with diced bell peppers and a sprig of dill.

The first appetizer of fresh cucumbers is ready.

Cucumber canapes.

Cut the cucumbers into circles 6-7 mm thick. Then use a flower cookie cutter to shape them. In principle, you can skip this point and leave the cucumbers round.

Cut the radishes into circles and place one circle in the center, on top of each cucumber flower.

Place a little pate on top of the radishes and garnish with a small sprig of dill.

The second appetizer of fresh cucumbers is ready.

Cucumber rolls.

Cut the butts off the cucumbers. Using a paring knife, cut the cucumbers into long strips.

Cut the bell pepper into small cubes as in the first option. And cut a couple of radishes into cubes of the same size.

Place one strip on the cutting board and then another strip, so that you end up with one long cucumber path.

Brush the cucumber with the pate, sprinkle with pepper and radish cubes and roll into a roll.
