Bake the pie in a silicone mold with jam. Cupcake with jam - recipe with photo

This recipe for shortbread pie with jam has been familiar to many since childhood. The pie will perfectly complement a regular home tea party, and will help out the hostess when unexpected guests arrive.

Ingredients

To prepare shortbread pie with jam you will need:
eggs - 2 pcs.;
flour - 2 cups;
butter or margarine - 150 g;
sugar - 1 glass;
baking powder - 1 tsp;
jam or jam - 200 g.

Cooking steps

1. Beat soft butter or margarine with sugar. Add eggs one at a time and mix well each time. Sift the flour with baking powder and add to the egg-butter mixture. Knead the dough. 2. Divide the dough into 2 unequal parts (1/3 and 2/3). Place both parts in the refrigerator for 30-40 minutes.

Roll out most of the dough and cut out a circle according to the diameter of the mold. Place the dough in a greased pan (I have a silicone pan, I don’t grease it). Trim the edges.

3. Place a layer of jam on top of the dough and carefully smooth it out with a spoon.

4. Form the smaller portion into strips and place on top of the jam. Carefully pinch the edges.

5. Place the shortbread pie with jam in the oven, heated to 200 degrees, and bake for 20-25 minutes.

Cool (otherwise the jam or preserves will spread), cut and serve with tea.

Bon appetit!

My college classmate gave me this cupcake recipe; she called it “Poor Student.” The student years are long gone, life has been divorced from a fellow student, the profession acquired at the institute has been safely forgotten, it feeds on a completely different work, but the recipe has not been forgotten. I have been using it for decades now, and so far it has not failed. I am sharing this really easy jam cupcake recipe. By the way, about the name. This means that even students surviving on scholarships can afford it, the ingredients are so accessible.

We will need:

Flour 2.5 cups;

Jam 0.5 cups;

Milk 1 glass;

Sugar 1 glass;

Refined sunflower oil 2 tbsp. spoons;

Soda full teaspoon;

Vinegar.

Cupcake recipe with jam

First of all, the baking container is prepared; out of student habit, I use an old cast-iron frying pan. The silicone mold does not need lubrication, and metal containers should be lubricated with refined oil. Since the dough is kneaded quickly, the oven is immediately turned on and the temperature is set to 220 degrees.

Sift the flour, measure out the required amount of sugar, milk and jam, put a bottle of butter, soda and a bite on hand to ensure quick kneading of the dough. Let's get started. Using a whisk (which is more convenient for them) combine the sugar with the eggs. A classmate said that you can make a cupcake without eggs, but I have never tried it without them. As for sugar, one glass is the norm for those with a sweet tooth; half a glass is fine.

Add jam, I use jam syrup. I especially like cherry; the berries are used to make bagels or cookies, and the remaining syrup is stored in a jar until it’s time to make the cupcake. And add milk, I like it better with sour milk. We work with a whisk.

Add sunflower oil. In principle, you can use homemade vegetable oil, but then the cake will acquire a characteristic taste. When using refined oil from the store, only jam tastes. Add flour and mix the mixture with a spoon.

Add the last component soda, quenched with a bite.

The dough turns out runny, which should not bother you. Pour it into the prepared container and put it in the oven. After half an hour, you can look into it; if the cake has darkened and the edges are starting to pull away, then you can take it out. It is possible that more baking time will be required. The cake is removed from the pan while still hot.

You can use additional ingredients in this cupcake recipe. For example, raisins. Firm plums or apples are good. Take some fruit, which should be cut into thin slices. Soft varieties should not be used, otherwise you will end up with porridge and not a cake. For beauty, you can sprinkle it with powdered sugar, but this is not necessary. It can be stored at room temperature for 3-4 days. Enjoy your tea!

Simple cupcake with jam

Even slightly fermented jam is suitable for this cupcake. But be prepared for the cherry or currant cake to turn out a strange gray color. This does not affect the taste, and you can disguise the unsightly shade by sprinkling the finished product with powdered sugar.

  • Kefir – 1 cup.
  • Sugar – 0.5 cup.
  • Eggs – 3 pcs.
  • Flour – 2.5–3 cups.
  • Soda – 1 tsp.

It’s very simple to prepare, you don’t need to beat anything, just stir with a fork:

  2. Pour in kefir, add eggs.
  3. Add sugar, stir until it dissolves.
  4. Add flour, adjusting the amount. The dough should be quite thick, but fluid.
  5. Grease the mold with oil if it is not silicone.
  6. Pour out the dough.
  7. Bake in an oven preheated to 180°C for 30 - 40 minutes, depending on the height of the cake. The match should come out dry in its center.

1 teaspoon of baking powder contains ¼ teaspoon of baking soda. Thus, baking soda is 4 times stronger than baking powder.
