Turtle cake with sour cream recipe. Turtle cake with sour cream: step-by-step recipe with photos

Step 1: Prepare biscuits for the cake.

One of the features of this cake is that it does not consist of biscuits or cake layers, but of many small flat cakes. Let's start preparing them. First, grind the sugar in a blender - this will simplify our task in the future, since the powdered sugar dissolves faster and more evenly. So, beat the eggs with sugar or powdered sugar until a stable foam appears. It is best to beat with a mixer, since whipping with a whisk will waste too much effort. We quench the soda in vinegar, add it to the dough, pour in flour and continue to beat the dough with a mixer. The dough should have a consistency similar to pancake dough.
Grease a baking sheet with butter or margarine, and using a spoon, spread the dough in the form of flat cakes onto the baking sheet. Preheat the oven to 200 degrees and bake the flatbreads in it for about 5 minutes, until browned.
Place the finished flatbreads on a plate and let them cool.

Step 2: Prepare the cream and base of the Turtle cake.

The butter must first be removed from the refrigerator and allowed to soften. Then add sugar to it and mix lightly, and then pour in the sour cream, add vanillin to taste and beat the mixture with a mixer. You need to whip the cream for 7-10 minutes so that the sugar has time to dissolve.
When the cream is ready, dip the cakes into it and give them time to soak a little. This is necessary so that when making a cake you do not have to look for cakes that are not soaked in cream, and it will take less time to soak the cake itself. Leave a few cakes in their original form - they will play the role of the paws, tail and head of the turtle.
Take the dish on which you will serve the cake and place the cakes soaked in cream in the shape of a turtle - do not forget about the paws, tail and head. You need to lay out the cakes in several layers, and pour the remaining cream on top of the cake. So that the base of the cake hardens and is suitable for decoration, put it in the refrigerator for a couple of hours.

Step 3: Prepare the glaze and decorate the Turtle cake.

While the cake is hardening, let's spend time usefully and prepare the icing for decorating the cake. To do this, mix all the ingredients in a metal bowl and mash the butter with a fork. Place the future glaze in a water bath and, stirring constantly, bring the ingredients until completely dissolved and evenly thick. You can taste the glaze and add those ingredients that you are missing.
We take the cake out of the refrigerator and carefully and evenly pour the glaze over it, leaving the paws, tail and head untouched. We wipe off any remaining glaze that flows down the dish, and put the cake in the refrigerator for 4-5 hours so that it sits, soaks and looks better.

Step 4: Serve the finished Turtle cake to the table.

Before serving, we’ll make the turtle’s eyes out of raisins or nuts and decorate the shell with them - here you can use your imagination. Serve the cake chilled at the end of the feast, along with aromatic tea or coffee. Bon appetit!

To prevent the cakes from burning, line the baking sheet with baking paper.

You can use milk instead of sour cream in the glaze.

You don't have to bake flatbreads; regular cookies will do. The composition of the cake can be changed according to your preferences.

You can add chocolate and chopped nuts to the glaze.

When making glaze, remember - milk reduces the thickness, sugar adds sweetness, cocoa adds bitterness and increases the thickness of the glaze.

This recipe is considered a classic. Due to the liquid consistency of sour cream, the cakes are soaked much faster than with cream with condensed milk.

Cake "Turtle" classic recipe with sour cream

  1. We start by preparing the biscuit dough. Mix the eggs with sugar in a deep bowl, beat with a mixer until the mass increases in volume and lightens. If you decide to use baking soda instead of baking powder, add it at this stage (quench with vinegar first).
  2. For a chocolate tint, add cocoa powder to the sugar-egg mixture. Mix the flour with baking powder and sift it in parts into a bowl, stirring the mixture. We adjust the portion of flour, focusing on the consistency of the dough - in terms of thickness it should be approximately like sour cream.
  3. Using a spoon, scoop up the viscous mass and place it on a baking sheet lined with parchment in the form of flat cakes. We maintain a distance between the “islands” of dough, as they will slightly increase in size during the baking process. Place the baking sheet into a hot oven. Bake sponge cakes at a temperature of 180-190 degrees for about 7-10 minutes.
  4. To check readiness, dip a match into the dough. If it remains completely dry, remove the baking sheet from the oven, carefully remove the cakes from the parchment and cool. Similarly, we form the following batches of biscuit blanks.

How to make sour cream for Turtle cake

  5. At the same time we are making cream for the cake. Combine sour cream with softened butter, sugar and cocoa powder.
  6. Beat with a mixer until the components combine into a homogeneous smooth mass.

How to make Turtle cake with sour cream

  7. To “assemble” the cake, choose a large kitchen board, tray or large plate. We dip the biscuit cakes one by one into the cream and lay them out in a heap, forming something like a turtle shell. We set aside five cakes at once to imitate the legs and head of a turtle.
  8. Pour the remaining cream onto the formed “slide” and coat the workpiece on all sides using a spatula. If you don’t want to waste time on forming the “Turtle”, you can simply lay the cakes in layers in a spring-form container, soaking them with cream, as in the recipe - regardless of the shape, the dessert will turn out very tasty!
  9. For the glaze, mix the remaining sour cream, sugar, butter and cocoa powder.
  10. Place over low heat and cook, stirring, until boiling.
  11. Fill the biscuit “shell” with chocolate glaze. We place one cake at the base of the cake as the “head” of the turtle, and place the remaining ones on the sides to imitate the legs. Carefully remove any excess glaze that drips onto the plate/board with a napkin.
  12. If desired, decorate the cake with pieces of walnuts. Be sure to put the “Turtle” on the refrigerator shelf so that the glaze hardens and the cakes are soaked in sour cream. On average, this will take 4-5 hours. When serving, cut the baked goods into portions.
