Field strawberries pureed with sugar recipe. Strawberries pureed with sugar for the winter

The classic recipe for pureed strawberries with sugar involves the use of only two ingredients, but despite this, the result exceeds all expectations. The berries are not subject to heat treatment, so pureed strawberries cannot be compared with regular jam! With the “cold” method of canning, the maximum amount of vitamins, natural taste and aroma are preserved. Preparation of a very beautiful bright color, it is aromatic, smells incredibly delicious of fresh strawberries, as if they were just from the garden.

No need to cook. The berries should be sorted, washed, covered granulated sugar, and then punch in a blender, mash with a pestle or pass through a meat grinder. And that’s it, all that remains is to pour it into sterilized jars, seal tightly and put it in the refrigerator. “Cold jam” will keep well for 4 months, and if you resort to freezing, the shelf life can be increased to 1 year.

Strawberries pureed with sugar for the winter will be well stored if they are prepared correctly:

  • It is best to pick berries on sunny days, as after rain they become watery and can rot and ferment;
  • the strawberries must be carefully sorted so that the “marriage” does not spoil the preparation;
  • the ratio of products is 1:1, that is, for 1 kg of berries you should take 1 kg of sand;
  • You can extend the shelf life if you increase the ratio to 1:2 or add a sugar “plug” under the lid;
  • puree should be poured exclusively into sterilized containers, preferably small in volume;
  • The product cannot be stored in a warm place or at room temperature; use of a refrigerator or freezer is allowed.

Ingredients

  • strawberries 500 g
  • granulated sugar 500 g

How to cook strawberries pureed with sugar

  1. First of all, you should process the berries, especially carefully, since the workpiece will not cook. I sort through the strawberries, discarding the crushed and spoiled ones. I rinse it under running water, remove all the leaves and let it dry.

  2. I add the full amount of sugar - 1 kilogram. Stir and leave for 3 hours in a cool place. The time will directly depend on the juiciness and ripeness of the berries.

  3. After the specified time, the strawberries will release juice and the sugar crystals will dissolve.

  4. All that remains is to grind the mass until smooth. It is most convenient to use an immersion blender, which copes with the task in just 1-2 minutes. A meat grinder or a regular potato masher will also work.

  5. You should get a homogeneous fruit mass of a beautiful color. If you used a potato masher for chopping, then, of course, you will get small pieces of berries.

  6. I pour the resulting preparation into small jars and close them with tin screw-on lids. The container must be sterilized and dry! I put it in the refrigerator for storage, where the jars will last for 4 months. If you want to extend the shelf life, then add 3-4 tablespoons of sugar under the lid, which forms a kind of “plug” that prevents oxygen from entering the jar. Also, part of the fruit puree can be frozen by pouring it into silicone molds - when low temperatures the mixture will not even harden completely, it will resemble something between marmalade and fruit ice.

“Living vitamin” can be served with tea or pancakes, added to porridge or poured over ice cream. If you froze the puree, then before using it is enough to keep it for 30-40 minutes at room temperature, after which you can safely use it for its intended purpose, just like fresh. Have a delicious tea party!

Every summer everyone eagerly waits for strawberries to ripen so that they can fully enjoy their sweet taste and wonderful aroma. But nothing lasts forever, and the berry season is ending. And in order to please yourself with the taste and aroma of summer even in winter frosts, you can prepare jam from strawberries ground with sugar for future use - a recipe for the winter.

This is the fastest and easiest way to grind strawberries with sugar without cooking. It is good because the natural taste of the berries is completely preserved.

So, you will need 1 kg of strawberries and 1.3 kg of sugar.

But first you need to prepare the container. Ideally, these are glass jars with a volume of no more than 0.5 - 0.6 liters. They need to be sterilized.

You can do this in the following way:

  • Boil the jars in a large saucepan for about 5 - 10 minutes
  • hold them over steam for 10 minutes
  • bake in the oven at 200 degrees for 10 - 15 minutes.

Set aside to cool and dry if necessary.
Boil the lids for at least 5 minutes. It is preferable to take polyethylene or screw caps; metal ones for screwing are not advisable.

Having prepared the jars, it’s time to take on the berries. Strawberries must be sorted, removing spoiled and rotten berries. Rinse 2 - 3 times; there is no need to keep the berries in water for a long time; they will become saturated with moisture, become watery and lose their taste and aroma. Drain in a colander and let the water drain properly - there is no need for excess moisture.
Place clean and dried berries in a deep bowl. Now we need to puree them

The ideal tool for this is a food processor or blender. He will cope with the task in just a couple of minutes. If you don't have a food processor, you can use a meat grinder. In extreme cases, the good old masher will do, but it won’t help you achieve a uniform puree consistency.

Next, you need to add 1 kg of sugar to the strawberry mass (the remainder will be used to make sugar caps in jars) and mix everything thoroughly. Ideally, the sugar should dissolve, so it is better to buy finer sand for this case.
Place the finished strawberry puree into dry jars, not reaching 1 cm from the edge. Sprinkle the remaining sugar on top, distributing it evenly among all jars. Close with lids and put in a dark, cool place.

Strawberries prepared in this way can only be stored at a temperature no higher than +5 degrees in the refrigerator or cellar, otherwise they may ferment and will be unsuitable for their intended use. Shelf life - no more than 6 months.

Recipe with lemon or citric acid

If you take less sugar and add lemon juice, you will get strawberry juice. In winter, you can make a delicious drink from it.

You need to take 1 kg of berries, sort them, wash them, and dry them. Next, mash the strawberries into a puree using any in a convenient way and add 250 g of granulated sugar and 1/2 tsp. citric acid or juice of one lemon. Mix everything well and place in sterile jars. Like classic strawberries with sugar, juice can be stored in a cold place for no more than six months.

To extend the shelf life, the strawberry mass must be boiled for 15 minutes and packaged hot into jars.
Dilute the juice with water in a 1:1 ratio. If the drink seems sour, you can add a little sugar. It will be especially pleasant to drink it after a bath or sauna.

Freezing.

Grated strawberries can be frozen. Both with sugar, at a ratio of 1:1, and without sugar. You can add it after defrosting.

First you need to prepare strawberry puree. After this, put it in plastic containers. It is not necessary to sterilize them. The size should be chosen so that the contents are enough for one time, because after defrosting it will not be possible to store it for a long time.

Place the finished packaged strawberry puree in the freezer.

In this form, the berries can be stored for an unlimited amount of time. At the same time, they retain all the beneficial substances and natural taste of strawberries.

You can use it to prepare various desserts, compote, jelly, dilute it as a fruit drink, or simply eat it - it will taste like fresh strawberries with sugar.

Without sterilization

Strawberries ground with sugar without sterilization or any other processing retain all the vitamins and nutrients. It retains the taste of ripe, fresh berries. It’s very quick to prepare - you just need to turn the berries into a puree and, adding sugar, stir and place in jars.

But despite the advantages, there are significant disadvantages

Berries that have not undergone heat treatment cannot be stored for a long time. In addition, they need special conditions - a cold, dark room, otherwise the workpieces will deteriorate.

The containers must be prepared especially carefully: rinse and sterilize the jars with lids, dry them.

With sterilization

If strawberries with sugar need to be stored all winter or there is not enough space to place all the jars in the refrigerator, then the preparations must be subjected to a sterilization process.

It will take time, but not a single jar will go bad, you won’t have to throw it away, and your work won’t be in vain.

  1. First you need to take a large pan or basin with a flat bottom, copper, for example, or galvanized.
  2. At the bottom, install a grate on which you will need to place the jars. If there is no grate, then lay down material like gauze.
  3. Place the filled jars with strawberries in a boiling container, cover them with lids, but do not seal them.
  4. Pour water up to the neck of the jars and put the whole structure on the fire.
  5. When it boils, reduce the heat to a minimum, do not allow it to boil strongly.
  6. Sterilize the workpieces in this way: 0.5 l - 1 min, 1 l - 15 min.
  7. When the required amount of time has passed, carefully remove the jars from the water so as not to get burned, trying not to move the lids on them, and now seal them hermetically.
  8. Place it all with the lids down to identify possible leaks.
  9. When the jars of strawberries have cooled, store them in a cellar or pantry.

Strawberries are considered one of the sweetest and most delicious garden berries. But it is not only tasty, but also healthy. It contains many vitamins that strengthen the immune system, and also contains substances that affect the production of “happiness hormones” in the body. Strawberries pureed with sugar for the winter will allow you to enjoy this tasty and healthy treat on cold days, improving your mood.

Cooking features

In order for strawberries, pureed for the winter, to retain their beneficial substances and not spoil until summer, they must be harvested correctly.

  • The most delicious strawberries are picked in the morning, before dew, on sunny days. If you pick it after rain, the berries will be watery or loose, which will negatively affect the organoleptic qualities of the “cold jam” and its preservation.
  • Before cooking, you need to sort the berries well so that rotten strawberries do not spoil the preparation.
  • Strawberries mashed with sugar should be sealed not just in clean jars, but in sterilized jars. In this case, it is better to give preference to small containers - from 0.2 to 0.5 liters.
  • The lids that will be used to close the jars should be boiled for 5 minutes, regardless of what material they are made of.
  • When storing strawberries in the freezer, defrost them gradually without heating them. This will preserve vitamins.

Recipes for pureed strawberries often depend on how you plan to store them in the winter. Thus, less sugar is required for storage in the freezer.

In any case, it is impossible to store “cold jam” in a warm place, even at room temperature. If storage conditions are met, the shelf life of strawberries mashed with sugar is 6 months.

Strawberries pureed with sugar like jam

  • strawberries – 2 kg;
  • sugar – 1.5 kg;
  • lemon – 1 pc.

Cooking method:

  • After sorting, washing and drying the strawberries, turn them into a homogeneous puree. This can be done by rubbing it through a sieve using a wooden masher or whipping it with a blender.
  • Mix the berry mixture with sugar and let it brew for an hour.
  • Wash, cut the lemon and squeeze the juice out of it. If there are any seeds in it, remove them.

  • Place over low heat and simmer for 40-60 minutes until the mixture thickens.
  • Divide the jam into sterilized jars, seal them and invert.
  • Wrap the jars of strawberries in something warm until they cool completely.

Due to heat treatment, strawberries mashed with sugar according to this recipe will not be as healthy as “jam without cooking,” but they can be stored in winter at room temperature. Moreover, it will not deteriorate when stored in a cool pantry or basement.

Strawberries mashed with sugar will be even tastier and healthier if part of them (no more than half) is replaced with honeysuckle. The amount of sugar should be left the same as in the selected recipe.
