Yet, what an unbearably alluring aroma hovers around the house when baking is being prepared - everyone at home, like bees to honey, “flocks” to the kitchen to first sit in anticipation of the delicious baked goods, and then try the freshest, softest, warm buns and cookies . It is this moment that creates a unique, very, very homely comfort!
This time I propose to prepare delicious poppy seed buns in chocolate glaze - soft dough, lots and lots of poppy seed filling and a chocolate “crust” - another one of my favorite memories from childhood!

Ingredients

To prepare poppy seed buns we will need (ingredients for 24 pcs., I made half the amount):

For the test:

dry yeast - 1.8 tsp;

flour - 500 g;

sugar - 1.5 tsp;

salt - 1.2 tsp;

butter - 40 g;

warm water - 260 ml.
For filling:

poppy - 200 g;

sugar - 120 g;

Thick apple jam - 2 tbsp. l.;

softened butter - 60 g.
For lubrication:

egg yolk - 1-2 pcs.;

butter - 1 tsp.
For chocolate glaze:

powdered sugar - 300 g;

cocoa - 4 tbsp. l.;

boiling water - 4-5 tbsp. l.

Cooking steps

I made the dough in a bread maker: add all the ingredients in the order written in the ingredients, set the “Dough” mode (for me, 2 hours 20 minutes). In the usual way: dissolve yeast and sugar in warm water, leave for 10 minutes, then add salt, melted butter and flour, knead soft dough, put it in a bowl or pan, cover and put in a warm place for 2 hours.

To prepare the filling: pour boiling water over the poppy seeds, leave for 15 minutes, then drain the water and pour boiling water over again, then squeeze through cheesecloth. Combine poppy seeds with sugar and jam, mix thoroughly, or crush with a masher.

Divide the finished dough into 4 parts, roll each into a rectangle 1 cm thick, grease the surface with softened butter (15 grams per roll).

Spread the poppy seed filling evenly (1/4 on each roll).


Bake poppy seed buns in an oven preheated to 220 degrees for 20-25 minutes (depend on your oven) until lightly browned.

Pour the finished glaze over the poppy seed buns and let cool.

Gorgeous rolls with plenty of filling and a generous douse of chocolate are not difficult to make at home. Poppy seed buns in chocolate glaze are prepared as follows:

  1. Prepare the yeast mixture in a deep bowl. Mix two tablespoons of sugar, flour and one of yeast in warm milk.
  2. Cover the dough with a towel and place the dough in a warm place for half an hour.
  3. In a separate container, mix eggs, a little salt and sweets. Beat until smooth. Add butter fat, previously melted in a water bath.
  4. Pour the egg-oil mixture into the dough, which has had time to rise in half an hour. Add flour in small portions, mix the ingredients, obtaining dough for making buns.

To make the mixture perfect, continue kneading, adding flour and vegetable oil. After kneading the dough, cover with a clean cloth and leave for 2 hours. The mass should double.

While the dough is rising, let's start filling. Pour the main ingredient with milk, add a couple of spoons of sweetness, and put on fire. As soon as the contents boil, reduce the heat and continue cooking for 7-10 minutes. Then cover the container with a lid, remove from heat and leave the mixture for 60-80 minutes.

Don’t forget to knead the dough and put it in a warm place for another hour and a half.

We proceed to preparing the filling, squeeze out the moisture from the poppy seeds by passing the mixture through a fine sieve. It is important to squeeze the excess milk out of the product well. If you use dry filling, the bun with poppy seeds and chocolate glaze will turn out fluffy.

Place the filling in a clean container, add two tablespoons of sugar and butter. Mix, place in a blender and thoroughly grind the ingredients.

Divide the dough into two portions, roll out a layer 6-8 mm thick. We spread the filling on the workpiece, not sparing, but also not going overboard with the quantity. To make homemade buns appetizing, put half of the entire sweet filling on each layer. We roll the workpiece into a roll, cut it into equal parts 5-7 cm wide.

We cover the baking sheet with a pastry mat, on which we place the blanks. To get such delicious buns, you shouldn't put them in the oven right away. Let them stand on the counter for 20 minutes while the oven preheats to 180 degrees. Bake sweet rolls for 20-30 minutes.
